Tofu Quiche with Gluten Free Crust

You won’t believe this rich and hearty quiche is vegan. Perfect for a special party
menu or a Sunday brunch.


Crust:
1⁄2 cup brown rice flour
1⁄2 cup gluten free oat flour
1⁄2 cup gluten free rolled oats
1⁄4 teaspoon sea salt
1⁄4 cup olive oil
3 – 4 tablespoons water (adjust dough by adding less or more water for doughy consistency)

Sautéed vegetables:
1 tablespoon olive oil
2 cloves garlic, minced
1 medium onion, diced
few pinches sea salt, plus more to taste
2 cups mushrooms, sliced
1⁄2 cup broccoli, blanched
1⁄4 cup green peas, frozen
1⁄4 teaspoon thyme

Tofu mixture:
1⁄2 cup broccoli
1 (14 ounce) package tofu, pressed for 30 minutes, drained
1 tablespoon white miso
1 tablespoon umeboshi vinegar
1 tablespoon arrowroot powder
1⁄4 teaspoon turmeric

To make crust:

  1. Preheat oven to 350°F. In a mixing bowl, place flour, rolled oats and sea salt. Mix well with spatula.
  2. Slowly add olive oil and mix with a fork. Mix with your hands to form crumbles.
  3. Slowly add water one tablespoon at a time, checking after each tablespoon to see if it’s enough water to make it a doughy consistency. If the dough is still dry after 3 tablespoons of water, add a little more water. Mix with hands to
  4. make a round dough. Spread the dough in an oiled pie dish.
  5. Puncture with a fork to make many small holes for air to circulate during baking.
  6. Bake for 10 minutes. Set aside to cool.

    Sautéing vegetables for tofu mixture:
  7. Heat oil in skillet, add onions, garlic and a couple pinches of sea salt. Sauté until color turns translucent.
  8. Add mushrooms, a couple more pinches of sea salt, and continue to sauté until mushrooms are tender.
  9. Add green peas and thyme, sauté for a few more minutes. Set aside to cool.

    To make tofu mixture:
  10. Blanch broccoli and set aside in separate bowl.
  11. In a food processor, place all of the tofu mixture ingredients except the broccoli. Blend until texture turns smooth. Adjust seasoning if necessary.
  12. In a large mixing bowl, place tofu mixture, blanched broccoli and sautéed vegetables. Mix thoroughly by using a spatula.

    To bake tofu quiche:
  13. Heat oven to 350°F. Place tofu filling in the quiche crust and spread evenly.
  14. Bake the quiche for 30 to 40 minutes, until the tofu filling becomes set and the surface turns golden.
  15. Using a pastry brush, spread a little olive oil on the top to give a shine to the surface.
  16. Cool for about 30 minutes to allow the quiche to fully set before slicing and eating.
